Slow Cooker Lasagna Soup

 

Happy New Year!

If you're anything like me you are craving a little routine and normalcy after the month that is December.  We eat, we drank, we stayed up late, we baked cookies, we switched Bobby our house elf every night . . . if you are a parent you know the drill.  The holidays are magic but I was exhausted come the day after Christmas.  This mama needed a clean house and a reset.

Well this recipe was the first on my list to make.  The full story is that my husband's family Christmas tradition is to make homemade raviolis.  And I'm ALL for this tradition.  But when it came time, after hosting family for a Christmas day brunch, we didn't have it in us.  All we wanted to do was eat something that wasn't sugar and only took a few minutes to make.

So we make frozen raviolis and ate them around out kitchen island with our 1.5 and 3.5 year old and it was perfection.  This is your permission slip to sometimes take the easy route.

But I had all the ingredients to make homemade raviolis and didn't want it to go to waste.  So why not just take all those ingredients and throw them in a soup.  When in doubt, make a soup.

This recipe is filling, full of vegetables, and comfort in a bowl.  The best part is that you don't need to plan on making homemade raviolis just to have the ingredients.  These are usually things I have in my house.  And . . . it's the best way to use leftover veggies when you don't want them to go back.
