Insalata Regina (My Version)

 

You know when a meal takes you back to a memory? That’s this salad for me. It’s takes me back to crashing my parents weekly date nights at Il Fornio (hello CA people!).

Now whenever we make this salad at home, I know it’s going to be a good day. It means it’s summertime, we’re eating outside and we’re probably having friends over. Some of these ingredients you might not always have on hand so this is a good one to plan ahead of time. But it’s easy to put together and feels fancy. Make a BIG bowl of this. You’ll be going back for seconds.
