Fall Harvest Salad
This salad is a result of my 2nd trimester pregnancy cravings. Now before you start thinking I ate salads throughout my entire pregnancy, let me just stop you right there. I mostly craved pizza, mac and cheese and sourdough bread throughout my first and second trimesters. I try to eat as healthy as possible but I’m also not going to feel guilty about honoring my cravings. If pizza was the only that that sounded good at the time, I was going to eat the damn pizza and be happy about it.
But one day, I started craving salads and this Fall Harvest Salad ticked all the boxes I was looking for. I love this salad because its hearty, filling and warm. I usually roast big batches of Brussel sprouts and sweet potatoes on Sunday so I can make this on repeat throughout the week. I love to serve it with the roasted vegetables and rice/quinoa warm.
