Pumpkin Pie Overnight Oats
It's finally the week of Thanksgiving and I am ready to start cooking and baking. But, I'm also working full-time and taking care of a 1.5 year boy. Time is limited but I wanted to make something filling and festive for some grab and go breakfasts this week.
This recipe was inspired by a pumpkin pie chia seed pudding I had at Little Bird Bakeshop in Fort Collins, CO. If you are ever in the area, check them out! The cutest, most delicious bakery in Fort Collins (they have the best chocolate croissants I've ever had).
This is such a easy recipe to throw together on a Sunday night to prepare for the week. Make a batch and keep them in the fridge. Although it looks sweet, I promise it's not. And . . . it's the perfect way to use some leftover pumpkin!
